2021 Cabernet Franc

An earthy and rustic Cabernet Franc with notes of bell pepper, black currant, dark plum, cherry, tobacco, dried violet, and volcanic rock. A delicious array of red plum, blueberry compote, pepper, baking spice, and sun dried tomato on the palate.
2021 had a long autumn season with sporadic precipitation events that both helped yet hindered picking dates. This vintage was famously smokey and we mitigated these effects naturally. This was a challenging vintage due to a smaller crop, but smaller berries resulted in intense tannins.
The grapes were de-stemmed and fermented whole in our three-ton Tonneau wooden tanks. Pump-overs were twice a day for 30 minutes under dry ice with one delestage. Fermentation was kept at 30 degrees Celsius post-fermentation to develop tannins and colour. The free-run juice was drained directly into barrels, mainly Sansaud spicy barrels, and the pressed wine was put into neutral puncheons. The wine was then aged for 14 months with one racking in July into more neutral barrels. The final blend is a selection of two high-quality barrels that display classic Cabernet Franc characteristics.
