This is a medium to full-bodied dry Chardonnay with balanced acidity. Distinctive aromas of caramel, lemon curd, marmalade, peony, brioche, and pastry on the nose. Full and ripe notes of preserved lemon rind, green almond, sourdough, vanilla and nectarine on the palate.
2021 had a long autumn season with sporadic precipitation events that both helped yet hindered picking dates. This vintage was famously smokey and we mitigated these effects naturally. This was a challenging vintage due to a smaller crop, but smaller berries resulted in intense tannins.
All clones (548/130/95/76) were harvested together and pressed directly to stainless steel tanks, then racked to a combination of neutral barrels, new Oak Damy barrels, and stainless steel barrels. Several different yeast strains were used to build complexity within the separate lots. Fermentation was three to four weeks long, with barrel stirring twice a week to re-distribute the lees, build body, and add a brioche character to the wine. The wine was aged on lees for nine months before being racked to tank in July where it aged for an additional seven months on lees before bottling.
