Wine Profile
Tasting Notes
The 2021 vintage is medium-bodied with balanced acidity and a smooth, complex texture. The nose reveals aromas of red cherries and strawberries, with hints of coconut, baking spices, and dried flowers. On the palate, experience notes of dark red fruits, tobacco, and mint, enriched by pomegranate juice, cherry pie filling, pastry, and a lingering earthy finish.
Vineyard Notes
2021 had a long autumn season with sporadic precipitation events that both helped yet hindered picking dates. This vintage was famously smokey and we mitigated these effects naturally. This was a challenging vintage due to a smaller crop, but smaller berries resulted in intense tannins.
Production Notes
The Cabernet Franc, Merlot, Cabernet Sauvignon, Malbec, Syrah, and Petit Verdot were cold-soaked for three to four days to extract colour and allow natural yeasts from the vineyard to develop unique flavours before inoculation and fermentation began. Once fermentation was complete, extended maceration in Tonneau oak vats locked in the colour and tannin characteristics this wine is known for. It was then aged for 16 months in French oak, followed by an additional month in stainless steel before bottling, and has been aging in the bottle ever since.
