Tasting Notes
A dry, full-bodied, and sophisticated Burgundian-style Chardonnay with distinctive aromas of caramel, lemon curd, marmalade, peony, brioche, and pastry on the nose. The palate presents full and ripe notes of preserved lemon rind, green almond, sourdough, vanilla,
and nectarine.
Vineyard Notes
2022 was a wet growing season with a perfectly long autumn that allowed temperatures to reach a non-ripening stage in late October. There was very low smoke and mildew pressure which kept our vineyard and grapes clean, making some experimental natural ferments not only possible, but successful.
Production Notes
This is a full, ripe, and sophisticated Burgundian-style Chardonnay.
All clones (548/95/76), except for clone 130, were harvested together and pressed directly into stainless steel tanks. They were subsequently racked into a combination of neutral barrels, second-fill Damy/Billon barrels, and stainless steel barrels. Various yeast strains were employed to enhance complexity in the separate lots, while clone 130 underwent natural fermentation with yeasts from the vineyard. Fermentation lasted for five weeks, with barrel stirring conducted twice a week to redistribute the lees, enhance body, and add a brioche character to the wine. The wine aged on lees for nine months before being transferred to tanks in July, where it underwent an additional seven months on lees before bottling.
