Blend: 71% Viognier, 21% Riesling, 8% Sémillon
Fresh and approachable on the nose with lively notes of pear, underripe pineapple, grass, and lemon zest. There is bright acidity on the palate with balanced flavours of lime juice, margarita, pineapple, green mango, kiwi, and fennel on the finish.
2022 was a wet growing season with a perfectly long autumn that allowed temperatures to reach a non-ripening stage in late October. There was very low smoke and mildew pressure which kept our vineyard and grapes clean, making some experimental natural ferments not only possible, but successful.
When creating this blend, each varietal was handled with care. Starting with the Viognier, which was split into three separate ferments to build complexity. The grapes were placed into a combination of two stainless steel tanks and four neutral French oak barrels. The Viognier was then fermented at 19 degrees Celsius to develop pear notes and to ensure a longer ferment. The barrels were stirred twice a week during fermentation. Simultaneously, the Sémillon was pressed directly into neutral French oak barrels with no stirring, while the Riesling was put into stainless steel tanks at 18 degree Celsius to maintain all of the grape's phenolics. Once each varietal was fermented separately, they were all blended together on November 23rd in stainless steel tanks, and the wine was aged on lees until bottling.
