This small-batch Viognier is rich and medium-bodied with bright acidity. A floral and tropical bouquet of guava, papaya, lychee, elderflower, lilac, quince, and golden apple on the nose. The palate is rich with notes of candied lime, Starburst candies, elderflower, dried papaya, and apricot.
2022 was a wet growing season with a perfectly long autumn that allowed temperatures to reach a non-ripening stage in late October. There was very low smoke and mildew pressure which kept our vineyard and grapes clean, making some experimental natural ferments not only possible, but successful.
The juice was directly pressed into two neutral Burgundy barrels. One barrel was left to ferment naturally and the other was inoculated with Mosaic Exotics yeast. Both barrels were stirred once a week during fermentation, then once a month afterwards as the wine aged on full lees. The Viognier was then racked to tank on February 6th to rest before bottling.
