Vineyard Notes
2023 was remarkably hot after a long cool Spring, accelerating the ripening process. To preserve bright acidity and freshness, the Sauvignon Blanc was harvested about a month earlier than in 2022.
Production Notes
The Sauvignon Blanc showcases the diversity of white grapes within our unique terroir, reflecting the skill and creativity of our winemaking team led by Bree McKeage. Inspired by Loire Valley Sauvignon Blancs, Bree displays her expertise through this exceptional wine. All Sauvignon Blanc lots were pressed directly into neutral Nadalie oak barrels and two new oak barrels. Four barrels underwent natural fermentation, while the remaining barrels were inoculated with several strains to enhance complexity. Malolactic fermentation was permitted in all barrels, with bâtonnage stopping following the malolactic process. The wine aged on lees for four and a half months before being blended and racked into stainless steel tanks, retaining the lees for additional tank aging for one and a half months before bottling.
